Michael Pollan’s In Defense of Food: An Eater’s Manifesto argues that the rise of “nutritionism”—the ideology that food is merely a sum of measurable nutrients—has damaged both eating and health. The book opens with its famous seven-word directive: “Eat food. Not too much. Mostly plants.” Pollan contends that Western nutrition science, food marketing, and government dietary advice have fragmented whole foods into nutrients like saturated fat, omega-3s, and antioxidants, then blamed or celebrated those components in isolation. This reductionism, he says, has produced decades of conflicting advice while rates of obesity, diabetes, and heart disease have climbed. The book is divided into three sections. The first, “The Age of Nutritionism,” traces how scientists, journalists, and food companies turned eating into a biochemical puzzle, often influenced by industry interests. The second, “The Western Diet,” examines what Pollan calls the Western diet—processed foods, added sugars, refined grains, and industrial fats—and its link to chronic “diseases of civilization.” He discusses research such as the Kikunae Ikeda’s isolation of umami and the paradox that populations eating traditional diets remain healthier than those adopting Western eating patterns, even when their diets contain supposedly unhealthy fats. The third section, “Getting Over Nutritionism,” offers rules for escaping the Western diet, such as avoiding foods with more than five ingredients, ingredients a third-grader cannot pronounce, or health claims on packages. Pollan advises shopping the periphery of supermarkets, cooking at home, and treating meals as social occasions rather than nutrient delivery systems. The book does not prescribe a diet but a way of seeing food as whole, cultural, and ecological. It became a central text in food-politics writing and a companion to Pollan’s earlier The Omnivore’s Dilemma, urging readers to “vote with their forks” for real food.
